This stew is modified from a recipe originally printed in Gourmet in 1954. You can use any protein, though lamb is traditional. I usually do beef. I also only know how to make it BIG. It is worth it. Serve with rice, couscous, or your other favorite substrate. Freeze the rest for later. You will thank me.
