Paleo Sesame Seed Hamburger Bun

Motherhood is a busy, occupying, draining, insanely rewarding activity.  My attempt to get a post out in the morning was totally thwarted by the fact that I did not finish writing the post until after midnight and sleepily scheduled it to launch on the 13th instead of the 12th.  Twelve hours later I realized it had not gone out and I posted it immediately, but I find myself too tired for a rambling inventive post when I would rather read comics and go to bed, though I have made plenty of food this week, of course.  The word is exhausted.

Last year, when I was much more disciplined about being Paleo, I invented this bad-boy recipe for hamburger buns, because I hated the gluten-free alternatives available at the store due to density of matter.  I was pretty pleased with it and it was one of the most viewed posts on my soon to be retired Pinching Paleo Facebook page.

Paleo Sesame Seed Hamburger Bun (Breads)

  • 1/2-cup almond flour
  • 1/2-cup coconut flour
  • 2-tsp baking powder
  • 1-tsp kosher salt
  • 8 eggs
  • 1/2-cup coconut oil, melted
  • 1/2-cup coconut milk drink/liquid of choice
  • Sesame seeds
  1. Preheat oven to 350°F.
  2. Line baking sheet with parchment paper. Place 8 3-inch rings on sheet if you have them. Grease all with additional coconut oil.
  3. In medium bowl, mix almond flour, coconut flour, baking powder, and salt.
  4. In small bowl, whisk eggs and melted coconut oil. Fold into flour mix. Spoon into rings. Sprinkle with seeds.
  5. Bake 20 minutes.

  1. Please explain “coconut milk/drink”.
    Is this a can of coconut milk, as used in Thai cooking, or the watery coconut water drinks? Im not getting the “drink” part. Thanks so much.

    1. The carton of coconut beverage. If you only have canned you can use half coconut milk and half water.
